Marinating the Steak
- Slice the skirt steak against the grain into 1/2-inch strips, then cut into bite-sized pieces for easier cooking and eating.
- In a medium bowl, combine the chipotle peppers in adobo, garlic powder, cumin, oregano, lime juice, olive oil, salt, and black pepper to create a flavorful marinade.
- Add the steak pieces to the marinade, ensuring they are well coated, then cover the bowl and refrigerate for at least 30 minutes, or preferably for a few hours for deeper flavor.
Cooking the Steak
- Heat a large skillet or grill pan over medium-high heat until it's very hot, which is crucial for a good sear.
- Add the marinated steak in a single layer, making sure not to overcrowd the pan, and cook for 2-3 minutes per side until properly seared and cooked to your desired doneness.
Preparing the Rice
- Rinse the basmati rice thoroughly under cold water until the water runs clear, then combine it with 2 cups of fresh water in a saucepan.
- Bring the rice to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until all the water is absorbed and the rice is tender.
- Once cooked, fluff the rice with a fork, then stir in the chopped cilantro and lime juice for a fresh, zesty flavor.
Assembling the Bowls
- Warm the tortilla bowls according to package instructions, then evenly distribute the cooked cilantro-lime rice among them.
- Top each bowl generously with the seared steak, then add your desired toppings such as shredded lettuce, salsa, sour cream, guacamole, shredded cheddar cheese, corn salsa, and black beans.
Notes
Adjust spice level by adding more or fewer chipotle peppers. For a healthier option, use brown rice instead of basmati. Feel free to customize toppings based on your preferences; grilled peppers and onions would also be excellent additions.
