Pumpkin Bars
- Preheat your oven to 350°F (175°C) and grease a 13x9 inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, salt, and ginger; set aside.
- In a large bowl, beat the eggs and granulated sugar until light and fluffy, then mix in the pumpkin puree and vegetable oil until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean; let the bars cool completely.
Cream Cheese Frosting
- In a medium bowl, beat the softened cream cheese and butter until smooth.
- Gradually add the confectioners' sugar and vanilla extract, beating until the frosting is smooth and creamy.
- Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over them, then cut into squares and serve.
Notes
For extra flavor, you can sprinkle a little more cinnamon or nutmeg on top of the frosting. These pumpkin bars are best stored in the refrigerator due to the cream cheese frosting.
