Preparation
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round baking pans.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the grated carrots until evenly distributed.
- Divide the batter evenly between the prepared baking pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Frosting
- In a large bowl, beat the softened cream cheese and butter until smooth and creamy.
- Gradually add the confectioners' sugar, beating until light and fluffy.
- Stir in the vanilla extract and milk until well combined and smooth.
- Once the cake layers are completely cool, frost the cake with the cream cheese frosting.
Notes
To ensure your carrot cake is extra moist, avoid overmixing the batter. Overmixing can develop the gluten in the flour too much, leading to a tougher cake. Also, make sure your cream cheese and butter are at room temperature for the frosting to achieve a smooth, lump-free consistency.
