Garden Prep
- Plant romaine lettuce, cherry tomato, and herb seeds or starter plants in well-drained soil, ensuring they receive adequate sunlight and water.
- Regularly tend to your garden, watering and fertilizing as needed, and protect your plants from pests until they are ready for harvest.
Chicken Preparation
- Preheat your oven to 400°F (200°C) and pat chicken breasts dry, then season them with olive oil, salt, and pepper.
- Cook the chicken for 18-20 minutes, or until an internal temperature of 165°F (74°C) is reached, then let it rest before slicing or dicing.
Dressing Preparation
- Combine mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, and anchovy paste (if using) in a bowl.
- Whisk all the ingredients together until the dressing is smooth and creamy, then taste and adjust seasonings as needed.
Salad Assembly
- Wash and chop the freshly harvested romaine lettuce, then halve the cherry tomatoes and roughly chop your fresh herbs.
- In a large bowl, combine the chopped romaine, cherry tomatoes, and sliced or diced chicken, then drizzle with the prepared Caesar dressing and toss to coat.
- Finally, add croutons and shaved Parmesan cheese, tossing gently one last time before serving.
Notes
For optimal results, ensure your garden plants are organically grown. The anchovy paste in the dressing is optional but adds a depth of flavor that is characteristic of a classic Caesar. You can also make your own croutons from day-old bread for an extra fresh touch.
