Prepare the Streusel Topping
- Combine flour, brown sugar, and cinnamon in a small bowl. Cut in the cold butter until coarse crumbs form, then set aside.
Prepare the Cake Batter
- Preheat oven to 375°F (190°C) and grease and flour a 9-inch square baking pan. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, cream together softened butter and egg, then gradually beat in milk and vanilla extract.
Combine Wet and Dry Ingredients
- Pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix the batter to keep the cake tender.
Assemble and Bake
- Pour half of the cake batter into the prepared pan and spread evenly. Sprinkle half of the streusel topping over the batter. Carefully spoon the remaining batter over the streusel, then top with the remaining streusel. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
Cool and Serve
- Allow the coffee cake to cool in the pan on a wire rack for at least 15 minutes before serving.
Notes
For extra flavor, add a pinch of nutmeg to the streusel. Do not overmix the cake batter, as this can lead to a tough cake. Ensure butter is softened for the cake and cold for the streusel for best results. To store, keep at room temperature in an airtight container for up to 3 days.
