Ingredients
  

For the Marinade
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Fajitas
  • 1 lb chicken breast or steak (sirloin, flank) cut into thin strips
  • 2 bell peppers (various colors) sliced
  • 1 onion sliced
  • 8 tortillas warmed
  • salsa for serving
  • sour cream for serving

Method
 

Marinate the Meat
  1. Whisk together lime juice, olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper in a bowl to create the marinade.
  2. Add the sliced chicken or beef to the marinade, ensuring it's fully coated, then cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
Cook the Fajitas
  1. Heat a large skillet or cast-iron pan over medium-high heat with a tablespoon of oil.
  2. Add the marinated meat to the hot skillet in a single layer, cooking for 3-5 minutes per side until browned and cooked through.
  3. Remove the meat from the skillet and set it aside.
  4. In the same skillet, add the sliced bell peppers and onion, cooking for 5-7 minutes until they are tender-crisp and slightly charred.
  5. Return the cooked meat to the skillet with the vegetables and toss everything together to combine, heating through for 1-2 minutes.
Serve
  1. Serve the fajita mixture immediately with warm tortillas, salsa, and sour cream.

Notes

For extra heat, add a pinch of cayenne pepper to the marinade. You can also customize your fajitas with toppings like guacamole, cheese, or fresh cilantro.
