Liquids & Seasoning
  • 6 cups Vegetable broth
  • 2 cups Water
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt or to taste
  • 0.5 teaspoon Black pepper or to taste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil

Method
 

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped carrots, celery, and onion to the pot and sauté until softened, about 5-7 minutes.
Cooking the Soup
  1. Stir in diced potatoes, canned diced tomatoes, vegetable broth, and water. Bring the mixture to a boil.
  2. Reduce heat to low, cover, and simmer for 20 minutes, or until potatoes are tender.
