Notes

This recipe is highly adaptable; feel free to substitute with other seasonal vegetables or your favorite lean proteins like chickpeas or lentils for a vegetarian option. For extra flavor, marinate your protest for at least 30 minutes before cooking. Adjust the dressing ingredients to suit your taste, adding a touch of honey for sweetness or red pepper flakes for heat. This salad is also excellent for meal prepping; store dressing separately and combine just before serving to prevent the greens from wilting.
