  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
Pecan Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1 cup chopped pecans
  • 1/3 cup unsalted butter melted
Marshmallow Topping (Optional)
  • 2 cups mini marshmallows

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Peel the sweet potatoes, cut them into 1-inch cubes, and boil them in salted water until very tender.
Sweet Potato Base
  1. Drain the sweet potatoes well, then mash them in a large bowl until smooth.
  2. Add the melted butter, granulated sugar, light brown sugar, eggs, milk, vanilla extract, and salt to the mashed sweet potatoes, mixing until well combined and smooth.
  3. Pour the sweet potato mixture into the prepared baking dish and spread it evenly.
Pecan Streusel Topping
  1. In a medium bowl, combine the flour, light brown sugar, and chopped pecans, then pour in the melted butter and mix until crumbly.
  2. Evenly sprinkle the streusel mixture over the sweet potato base in the baking dish.
Baking
  1. Bake for 30 minutes, or until the streusel is golden brown and the casserole is heated through.
  2. If adding marshmallows, remove the casserole, top with marshmallows, and bake for an additional 10-15 minutes until golden brown.
