Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
- Boil the sweet potato cubes in a large pot of lightly salted water for about 15-20 minutes until they are tender when pierced with a fork; drain well.
Assemble Casserole
- Mash the cooked sweet potatoes in a large bowl, then add the melted butter, granulated sugar, milk, beaten eggs, vanilla extract, and salt; mix until well combined and smooth.
- In a separate bowl, prepare the topping by combining the brown sugar, flour, and cold cubed butter, cutting the butter into the dry ingredients until the mixture resembles coarse crumbs, then stir in the chopped pecans.
- Spread the sweet potato mixture evenly into the prepared baking dish, then sprinkle the pecan topping over the sweet potato mixture.
- Bake for 25-30 minutes, or until the topping is golden brown and bubbly, then let it cool slightly before serving.
Notes
For an extra touch, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture. This casserole is perfect for holiday meals or as a comforting side dish any time of year.
