- Cook the pasta according to package directions, then drain and rinse with cold water to cool.
- In a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and crumbled feta cheese.
- Pour the Italian dressing over the pasta and vegetables, and toss gently to ensure everything is evenly coated.
- Stir in the fresh chopped parsley just before serving.
Notes
For best flavor, chill the pasta salad for at least 30 minutes before serving. You can also add grilled chicken or chickpeas for extra protein.
