  • 2 medium tomatoes
  • 0.5 medium red onion
  • 0.5 cup Kalamata olives
  • 4 oz feta cheese block, not crumbled
Dressing
  • 0.25 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • large bowl
  • knife
  • cutting board
  • small bowl
  • whisk

Method

Preparation
  1. Wash and chop the cucumber into half-moon slices; then halve the tomatoes and slice the red onion into thin rings.
  2. Combine the chopped cucumber, tomatoes, sliced red onion, and Kalamata olives in a large bowl, mixing gently.
Dressing and Serving
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
  2. Pour the dressing over the vegetables, toss gently to coat, and place the block of feta cheese on top before serving immediately.

Notes

For the best flavor, use high-quality, fresh ingredients, especially ripe tomatoes and good extra virgin olive oil. Do not crumble the feta cheese; serve it as a block on top of the salad as is traditional. Serve the salad immediately after dressing to prevent it from becoming soggy.
