Preparation

Roasting

- Roast for 60-90 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
- Baste the chicken every 20-30 minutes with the pan juices to keep it moist and promote even browning.
Resting and Serving
- Once cooked, remove the chicken from the oven and transfer it to a cutting board, covering it loosely with foil.
- Let the chicken rest for 10-15 minutes before carving; this allows the juices to redistribute, ensuring a tender and flavorful result.
- Carve the chicken and serve immediately with the roasted vegetables and pan juices.
