Preparation
  1. In a medium bowl, whisk together soy sauce, honey, grated ginger, and minced garlic to create the sauce.
Cooking
  1. Heat a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  2. Add the broccoli florets and sliced bell peppers to the skillet and sauté for 3-5 minutes until tender-crisp.
  3. Pour the prepared sauce over the chicken and vegetables, stirring to coat evenly; cook for another 2-3 minutes until the sauce thickens slightly.
  4. Serve immediately with your choice of rice or noodles for a complete weeknight meal.

Notes

For extra flavor, marinate the chicken in half of the sauce for 15 minutes before cooking. Adjust the honey amount to your sweetness preference, and feel free to add a pinch of red pepper flakes for a touch of heat. This recipe is also great with other vegetables like snap peas or carrots.
