Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef until it is browned, then drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet and sauté until softened, about 5 minutes.
  4. Stir in the chili powder, cumin, salt, and black pepper, cooking for another minute until fragrant.
  5. Pour in the tomato sauce and beef broth, then bring the mixture to a simmer and cook for 10 minutes to allow the flavors to meld.
  6. Warm the corn tortillas in the microwave or a dry skillet to make them pliable, preventing them from breaking when rolled.
Assembly and Baking
  1. Spread a thin layer of the beef sauce mixture on the bottom of the prepared baking dish.
  2. Fill each warm tortilla with about 2-3 tablespoons of the beef mixture and a sprinkle of both Cheddar and Monterey Jack cheeses, then roll them up tightly.
  3. Place the rolled enchiladas seam-side down in the baking dish, arranging them in a single layer.
  4. Pour the remaining beef sauce over the enchiladas, ensuring they are evenly coated, then generously sprinkle with the remaining shredded cheeses.
  5. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
