Method
 

Preparation
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

Mixing and Baking
  1. In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
  2. Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
  3. Spread the granola mixture in an even layer on the prepared baking sheet.
  4. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy.
Finishing Touches
  1. Remove the granola from the oven and let it cool completely on the baking sheet before adding any optional dried fruit or chocolate chips.
  2. Store the cooled granola in an airtight container at room temperature for up to two weeks.
