Bake the Cake
- Preheat your oven to 375°F (190°C) and line a 15x10-inch baking pan with parchment paper, then grease and flour it.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, and salt.
- In a large bowl, beat the eggs and granulated sugar until light and fluffy, then mix in the pumpkin puree until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then spread the batter evenly into the prepared pan.
- Bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean; immediately invert the warm cake onto a powdered sugar-dusted kitchen towel.
Roll and Chill
- Carefully roll the cake and towel together from the short side, then let it cool completely on a wire rack for at least 1 hour.
- While the cake cools, beat the cream cheese, powdered sugar, softened butter, and vanilla extract until smooth for the filling.
Assemble and Serve
- Once the cake is cool, unroll it gently and spread the cream cheese filling evenly over the surface, leaving a small border.
- Carefully re-roll the cake, without the towel, and wrap it tightly in plastic, then chill for at least 1 hour before slicing and serving.
Notes
For best results, make sure your cream cheese and butter are at room temperature for a smooth filling. You can also add a pinch of nutmeg to the cake batter for extra spice. This pumpkin roll can be stored in the refrigerator for up to 3 days.
