Ingredients
  

Waffle Batter
  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp active dry yeast
  • 1.5 cups warm milk (about 105-115°F)
  • 0.5 cup melted unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Method
 

Prepare Batter
  1. In a large bowl, whisk together the flour, sugar, and active dry yeast; set aside.
  2. In a separate bowl, combine the warm milk, melted butter, eggs, vanilla extract, and salt.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined; do not overmix.
Fermentation (3-Day Growth)
  1. Cover the bowl tightly with plastic wrap and refrigerate for at least 24 hours, and up to 3 days, allowing the yeast to slowly ferment and develop flavor.
Cook Waffles
  1. Remove the batter from the refrigerator and let it sit at room temperature for 30 minutes before cooking.
  2. Preheat your waffle iron according to the manufacturer's instructions and lightly grease if necessary.
  3. Pour about 1/2 to 3/4 cup of batter per waffle, depending on your waffle iron, and cook for 4-5 minutes until golden brown and crispy.
  4. Serve immediately with your favorite toppings.

Notes

The longer refrigeration time allows for a deeper, more complex flavor to develop in the waffles. Ensure your milk is not too hot when adding yeast, as it can kill the yeast and prevent fermentation.
