  • 4 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 0.5 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • salt and black pepper to taste

Method
 

Instructions
  1. Cook diced potatoes in broth until tender, about 10-12 minutes.
  2. While potatoes cook, melt butter in a separate saucepan, then whisk in flour to create a roux and cook for 1 minute.
  3. Gradually whisk in milk and cream into the roux, cooking until thickened.
  4. Mash about half of the cooked potatoes in the broth for a thicker soup.
  5. Combine the thickened cream mixture with the potato and broth mixture, stir well, and season with salt and pepper to taste.

Notes

For extra flavor, add some chopped cooked bacon or fresh chives as a garnish.
