  • 0.5 cup Black Beans rinsed and drained
  • 0.5 cup Corn
  • 0.5 Avocado diced
  • 0.25 cup Red Onion diced
  • 2 tbsp Cilantro chopped
  • 1 tbsp Lime Juice
  • 0.5 tsp Chili Powder
  • 0.25 tsp Cumin
Asian Quinoa Bowl
  • 0.5 cup Edamame shelled
  • 0.5 cup Carrots shredded

Method
 

Cooking Quinoa
  1. Rinse quinoa thoroughly under cold water using a fine-mesh sieve, then combine the rinsed quinoa and water in a medium saucepan.
  2. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed.
  3. Remove the saucepan from heat and let it stand covered for 5 minutes; then fluff the quinoa with a fork.
Mediterranean Quinoa Bowl
  1. In a bowl, combine the cooked quinoa with diced cucumber, halved cherry tomatoes, Kalamata olives, and crumbled feta cheese.
  2. Whisk together olive oil and lemon juice, then drizzle this dressing over the quinoa bowl.
