Cooking Pasta
- Cook the pasta according to package directions in a large pot of salted boiling water.
- Before draining, reserve about 1 cup of the pasta cooking water.
Making Shrimp Scampi
- Melt butter in a large skillet over medium heat, then add garlic and red pepper flakes, cooking until fragrant (about 1 minute).
- Stir in shrimp and cook until pink and opaque (2-3 minutes per side).
- Remove the shrimp from the skillet and set aside.
- Add white wine or chicken broth and lemon juice to the skillet, bringing it to a simmer and scraping up any browned bits.
- Return the cooked pasta and shrimp to the skillet.
- Toss everything together, adding a little reserved pasta water if needed to create a light sauce. Stir in fresh parsley and season with salt and pepper to taste.
Notes
For extra flavor, you can add a squeeze of fresh lemon juice just before serving. A sprinkle of Parmesan cheese also makes a great addition, though it's not traditionally in scampi recipes. Adjust red pepper flakes to your preferred spice level.
