  • 12 ounces linguine or spaghetti
Shrimp Scampi
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup lemon juice
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Method
 

Cooking Pasta
  1. Cook the pasta according to package directions in a large pot of salted boiling water.
  2. Before draining, reserve about 1 cup of the pasta cooking water.
Making Shrimp Scampi
  1. Melt butter in a large skillet over medium heat, then add garlic and red pepper flakes, cooking until fragrant (about 1 minute).
  2. Stir in shrimp and cook until pink and opaque (2-3 minutes per side).
  3. Remove the shrimp from the skillet and set aside.
  4. Add white wine or chicken broth and lemon juice to the skillet, bringing it to a simmer and scraping up any browned bits.
  5. Return the cooked pasta and shrimp to the skillet.
  6. Toss everything together, adding a little reserved pasta water if needed to create a light sauce. Stir in fresh parsley and season with salt and pepper to taste.

Notes

For extra flavor, you can add a squeeze of fresh lemon juice just before serving. A sprinkle of Parmesan cheese also makes a great addition, though it's not traditionally in scampi recipes. Adjust red pepper flakes to your preferred spice level.
