  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup diced cooked chicken optional
  • 0.5 cup diced bell pepper optional
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat a large non-stick skillet or griddle over medium heat.
  2. Lightly brush one side of a tortilla with olive oil.
  3. Place the oiled tortilla face down in the preheated skillet.
  4. Sprinkle half a cup of cheese evenly over the tortilla, then add any optional fillings like chicken or bell pepper.
  5. Place another tortilla on top of the filling.
  6. Cook for 2-3 minutes per side, or until golden brown and the cheese is melted.
  7. Remove the quesadilla from the skillet and let it cool slightly before slicing.
  8. Repeat the process for the remaining tortillas and fillings.

Notes

Serve with your favorite salsa, guacamole, or sour cream. For extra flavor, sprinkle some chili powder or cumin with the cheese. Adjust the amount of filling per quesadilla based on your preference; do not overfill to ensure proper cooking.
