- Heat olive oil in a large pot over medium heat, then add chopped onion, diced carrots, and diced celery; sauté for 5-7 minutes until soft.
- Stir in minced garlic and cook for one minute until fragrant.
- Add cubed potatoes, diced zucchini, canned diced tomatoes, vegetable broth, bay leaf, dried thyme, salt, and black pepper to the pot.
- Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until potatoes are tender.
- Stir in green beans and simmer for another 5-7 minutes, uncovered, until tender-crisp.
- Remove bay leaf, adjust seasoning, then serve stew garnished with fresh chopped parsley.
