  • 3 cloves Garlic minced
  • 2 large Potatoes peeled and cubed
  • 1 medium Zucchini diced
  • 1 can Canned diced tomatoes undrained (14.5 oz)
  • 4 cups Vegetable broth
  • 1 Bay leaf
  • 1 tsp Dried thyme
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black pepper or to taste
  • 1 cup Green beans trimmed and cut
  • 2 tbsp Fresh parsley chopped (for garnish)

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat, then add chopped onion, diced carrots, and diced celery; sauté for 5-7 minutes until soft.
  2. Stir in minced garlic and cook for one minute until fragrant.
  3. Add cubed potatoes, diced zucchini, canned diced tomatoes, vegetable broth, bay leaf, dried thyme, salt, and black pepper to the pot.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until potatoes are tender.
  5. Stir in green beans and simmer for another 5-7 minutes, uncovered, until tender-crisp.
  6. Remove bay leaf, adjust seasoning, then serve stew garnished with fresh chopped parsley.
