Preparation
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook until pink and opaque, about 2-3 minutes; remove and set aside.
- Add the remaining vegetable oil to the skillet, then add the minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.
- Push the garlic and ginger to one side and pour the beaten eggs into the other side; scramble the eggs and then mix them with the garlic and ginger.
- Add the cooked rice and mixed vegetables to the skillet, breaking up any clumps of rice, and stir-fry for 3-5 minutes.
- Add the cooked shrimp back to the skillet, pour in the soy sauce and sesame oil, and stir-fry for another 1-2 minutes until everything is well combined and heated through.
Notes
For best results, use day-old cooked rice as it's drier and fries up better. You can customize this recipe with your favorite protein or vegetables.
