  • 3 cups cooked rice
  • 1 lb shrimp peeled and deveined
  • 2 eggs
  • 1 cup mixed vegetables
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp vegetable oil

Method
 

Preparation
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until pink and opaque, about 2-3 minutes; remove and set aside.
  3. Add the remaining vegetable oil to the skillet, then add the minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.
  4. Push the garlic and ginger to one side and pour the beaten eggs into the other side; scramble the eggs and then mix them with the garlic and ginger.
  5. Add the cooked rice and mixed vegetables to the skillet, breaking up any clumps of rice, and stir-fry for 3-5 minutes.
  6. Add the cooked shrimp back to the skillet, pour in the soy sauce and sesame oil, and stir-fry for another 1-2 minutes until everything is well combined and heated through.

Notes

For best results, use day-old cooked rice as it's drier and fries up better. You can customize this recipe with your favorite protein or vegetables.
