  • 1 cup marshmallows

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Peel and cut the sweet potatoes into 1-inch cubes, then boil them in a large pot of salted water until tender, which usually takes 15-20 minutes.
  3. Drain the sweet potatoes and mash them in a large bowl, then add butter, milk, brown sugar, cinnamon, nutmeg, and salt, mixing until smooth and well combined.
Baking
  1. Spread the sweet potato mixture evenly into the prepared baking dish.
  2. If desired, sprinkle chopped pecans over the sweet potato mixture and/or top with marshmallows.
  3. Bake for 20-25 minutes, or until the casserole is heated through and the topping is golden brown (if using marshmallows, bake until they are puffed and lightly browned).

Notes

For extra flavor, add a splash of vanilla extract to the sweet potato mixture. You can also prepare this casserole ahead of time and refrigerate it before baking. Just add an extra 10-15 minutes to the baking time if baking from cold.
