Preparation
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides; then remove them from the pot and set aside.
- Add chopped onion and sliced bell peppers to the pot, cooking until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
Cooking
- Pour in crushed tomatoes, chicken broth, dried oregano, and dried basil. Bring the mixture to a simmer.
- Return the browned chicken to the pot. Reduce heat, cover, and simmer for 30-45 minutes, or until the chicken is cooked through and tender.
Serving
- Serve the Chicken Cacciatore hot, garnished with fresh basil or parsley if desired.
Notes
For an extra layer of flavor, add sliced mushrooms along with the bell peppers and onions. Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
