Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, and salt; set aside.
Making the Dough
  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain.
Baking the Cookies
  1. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  2. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
  3. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra touch, you can add a cream cheese frosting once the cookies are completely cooled. Ensure your pumpkin puree is 100% pumpkin and not pumpkin pie filling, which contains added sugars and spices. Do not overmix the dough, as this can lead to tough cookies. Adjust spices to your preference for a more or less intense pumpkin flavor.
