Method
 

Preparation
  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and vanilla extract; then, gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
  3. Heat vegetable oil in a large, deep skillet or Dutch oven over medium-high heat until it reaches 350-375°F (175-190°C).
Frying the Funnel Cake
  1. Pour about 1/2 to 3/4 cup of batter into a funnel with your finger covering the opening, then hold the funnel over the hot oil and release your finger, moving the funnel in a circular or zig-zag motion to create a lacy design.
  2. Fry for 2-3 minutes per side, or until golden brown, then carefully remove the funnel cake from the oil and place it on a wire rack lined with paper towels to drain excess oil.
