  • 1 bunch kale lacinato or curly, tough stems removed, thinly sliced
  • 0.25 cup almonds sliced, toasted
  • 2 tablespoons Parmesan cheese grated or shaved
Lemon Dressing
  • 3 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup
  • 1 clove garlic minced
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Method
 

Preparation
  1. Wash and thoroughly dry the kale, then thinly slice it and set aside.
