Growing Chickpeas
- Fill your container with potting soil, leaving about an inch of space from the top.
- Plant chickpea seeds about 1 inch deep and 2 inches apart in the soil.
- Water thoroughly after planting and keep the soil consistently moist.
- Place your container in a sunny spot and thin seedlings to 4-6 inches apart once they are a few inches tall.
- Harvest chickpea pods when they are plump and green, usually 3-4 months after planting.
Making Chickpea Salad
- In a medium bowl, mash the cooked chickpeas with a fork until mostly smooth but some texture remains.
- Stir in the chopped celery, red onion, mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Mix everything well to combine all ingredients thoroughly.
- Taste and adjust seasonings as needed, then stir in fresh parsley.
- Serve immediately, or chill for at least 30 minutes for flavors to meld, then serve on bread, crackers, or lettuce wraps.
Notes
Growing chickpeas takes time, so plan accordingly. For a quicker salad, use canned chickpeas. This salad is versatile; feel free to add other finely chopped vegetables like bell peppers or grated carrots. Adjust the amount of mayonnaise to your preference for creaminess. Store leftover chickpea salad in an airtight container in the refrigerator for up to 3-4 days.
