  • 3 cups Cooked white rice cold, day-old rice works best
  • 1 lb Chicken breast diced
  • 2 Eggs beaten
  • 1 cup Frozen peas and carrots
  • 3 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 tbsp Vegetable oil
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated
Garnish (Optional)
  • 2 Green onions chopped
Seasoning (Optional)
  • Salt to taste
  • Black pepper to taste

Method
 

Cooking Steps
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until browned and cooked through, then remove from the skillet and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet.
  4. Pour in the beaten eggs and scramble them, breaking into small pieces as they cook, then remove and set aside.
  5. Add minced garlic and grated ginger to the skillet and stir-fry for about 30 seconds until fragrant.
  6. Add the cold rice and frozen peas and carrots to the skillet, stirring to combine.
  7. Stir in the cooked chicken and scrambled eggs.
  8. Pour in the soy sauce and sesame oil, mixing well to ensure all ingredients are coated.
  9. Cook for another 2-3 minutes, stirring occasionally, until everything is heated through and well combined.
  10. Season with salt and black pepper to taste, if desired.
  11. Garnish with chopped green onions before serving, if using.

Notes

For best results, use day-old, cold rice as it is less sticky and fries better. You can customize the vegetables based on your preference; corn, bell peppers, or onions are also great additions. Ensure your skillet or wok is hot enough for proper stir-frying.
