Cooking Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add diced chicken and cook until browned and cooked through, then remove from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet.
- Pour in the beaten eggs and scramble them, breaking into small pieces as they cook, then remove and set aside.
- Add minced garlic and grated ginger to the skillet and stir-fry for about 30 seconds until fragrant.
- Add the cold rice and frozen peas and carrots to the skillet, stirring to combine.
- Stir in the cooked chicken and scrambled eggs.
- Pour in the soy sauce and sesame oil, mixing well to ensure all ingredients are coated.
- Cook for another 2-3 minutes, stirring occasionally, until everything is heated through and well combined.
- Season with salt and black pepper to taste, if desired.
- Garnish with chopped green onions before serving, if using.
Notes
For best results, use day-old, cold rice as it is less sticky and fries better. You can customize the vegetables based on your preference; corn, bell peppers, or onions are also great additions. Ensure your skillet or wok is hot enough for proper stir-frying.
