  • 0.25 tsp black pepper
  • 0.5 tsp dried thyme
  • 2 tbsp fresh parsley chopped, for garnish

Preparation
  1. Cook chicken: Heat olive oil in a large pot over medium heat, add chicken breast, and cook until browned and cooked through, about 5-7 minutes per side. Remove chicken from pot and shred.
  2. Sauté vegetables: Add carrots, celery, and onion to the same pot and cook until softened, about 5 minutes.
  3. Combine ingredients: Pour in chicken broth, then add shredded chicken, egg noodles, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 10 minutes, or until noodles are tender.
Serving
  1. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, you can add a bay leaf while simmering and remove it before serving. Feel free to adjust the amount of seasoning to your taste. This soup is also great with a squeeze of lemon juice at the end for brightness.
