Prepare the chicken
- In a medium bowl, combine the chicken pieces with soy sauce, rice vinegar, sesame oil, and cornstarch. Toss to coat and let it marinate for at least 15 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook for 3-4 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the sauce
- In a small bowl, whisk together chicken broth, soy sauce, rice vinegar, hoisin sauce, sugar, red pepper flakes, grated ginger, minced garlic, and cornstarch. Whisk until smooth.
Combine and serve
- Pour the sauce into the skillet and bring to a simmer, stirring constantly, until the sauce thickens. Return the cooked chicken to the skillet and toss to coat evenly with the sauce.
- Garnish with chopped green onions and sesame seeds, then serve immediately with rice.
Notes
For extra crispiness, consider double-frying the chicken. You can adjust the amount of red pepper flakes to suit your spice preference.
