Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
Marinade
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
Sauce
  • 0.5 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 2 tablespoons sugar
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch

  • 0.5 cup vegetable oil
  • green onions, chopped for garnish
  • sesame seeds for garnish

Method
 

Prepare the chicken
  1. In a medium bowl, combine the chicken pieces with soy sauce, rice vinegar, sesame oil, and cornstarch. Toss to coat and let it marinate for at least 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook for 3-4 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the sauce
  1. In a small bowl, whisk together chicken broth, soy sauce, rice vinegar, hoisin sauce, sugar, red pepper flakes, grated ginger, minced garlic, and cornstarch. Whisk until smooth.
Combine and serve
  1. Pour the sauce into the skillet and bring to a simmer, stirring constantly, until the sauce thickens. Return the cooked chicken to the skillet and toss to coat evenly with the sauce.
  2. Garnish with chopped green onions and sesame seeds, then serve immediately with rice.

Notes

For extra crispiness, consider double-frying the chicken. You can adjust the amount of red pepper flakes to suit your spice preference.
