Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground cloves; set aside.
Mixing
- In a separate large bowl, whisk together the granulated sugar, light brown sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined; do not overmix.
- If desired, gently fold in any optional add-ins like chocolate chips, nuts, or raisins.
Baking
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
Notes
For an extra moist bread, you can add 1/4 cup of applesauce to the wet ingredients. This bread freezes well; wrap tightly in plastic wrap and then in foil for up to 3 months. Thaw at room temperature before serving.
