Preparation
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, combine the graham cracker crumbs, powdered sugar, peanut butter, and melted butter. Mix until well combined and a dough-like consistency is formed.
- Press the mixture evenly into the prepared baking pan, ensuring it is compact and smooth.
Topping & Chilling
- Melt the chocolate chips in a microwave-safe bowl or over a double boiler until smooth.
- Pour the melted chocolate over the peanut butter base and spread evenly with an offset spatula or the back of a spoon.
- Refrigerate for at least 45 minutes, or until the chocolate is set.
Serving
- Once chilled, use the parchment paper overhang to lift the bars out of the pan.
- Cut the bars into squares or rectangles and serve.
Notes
For extra crunch, add a handful of chopped peanuts to the base mixture. You can also drizzle white chocolate on top for a decorative finish. Store these bars in an airtight container in the refrigerator for up to a week.
