  • 2 cups graham cracker crumbs
  • 1 cup powdered sugar
  • 1 cup peanut butter
  • 1/2 cup unsalted butter, melted
Chocolate Topping
  • 1 cup chocolate chips

Equipment

  • 8x8 inch baking pan
  • large bowl
  • microwave-safe bowl (or double boiler)

Method

Preparation
  1. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, combine the graham cracker crumbs, powdered sugar, peanut butter, and melted butter. Mix until well combined and a dough-like consistency is formed.
  3. Press the mixture evenly into the prepared baking pan, ensuring it is compact and smooth.
Topping & Chilling
  1. Melt the chocolate chips in a microwave-safe bowl or over a double boiler until smooth.
  2. Pour the melted chocolate over the peanut butter base and spread evenly with an offset spatula or the back of a spoon.
  3. Refrigerate for at least 45 minutes, or until the chocolate is set.
Serving
  1. Once chilled, use the parchment paper overhang to lift the bars out of the pan.
  2. Cut the bars into squares or rectangles and serve.

Notes

For extra crunch, add a handful of chopped peanuts to the base mixture. You can also drizzle white chocolate on top for a decorative finish. Store these bars in an airtight container in the refrigerator for up to a week.
