Ingredients
  

Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
Marinade
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp cornstarch
Orange Sauce
  • 0.5 cup orange juice
  • 0.25 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp ginger grated
  • 2 cloves garlic minced
  • 0.5 tsp red pepper flakes
  • 1 tbsp cornstarch mixed with 2 tbsp water
Frying
  • vegetable oil for frying

Method
 

Marinade Chicken
  1. In a bowl, combine the chicken pieces with soy sauce, rice vinegar, sesame oil, and cornstarch. Mix well and let it marinate for at least 15 minutes.
Prepare Orange Sauce
  1. While the chicken marinates, whisk together orange juice, honey, soy sauce, rice vinegar, grated ginger, minced garlic, and red pepper flakes in a small saucepan. Bring to a simmer over medium heat.
  2. Stir in the cornstarch slurry and cook until the sauce thickens to your desired consistency. Set aside.
Cook Chicken
  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Fry the chicken in batches until golden brown and cooked through.
  2. Remove the cooked chicken and place it on a plate lined with paper towels to drain excess oil.
Combine and Serve
  1. Return all the cooked chicken to the skillet. Pour the orange sauce over the chicken and toss to coat evenly.
  2. Serve immediately with steamed rice and a sprinkle of sesame seeds, if desired.

Notes

For extra crispiness, you can double-fry the chicken. Fry once until lightly golden, then remove and let it rest for a few minutes before frying again until deep golden and crispy.
