Preparation
- Preheat your oven to 400°F (200°C) and place one pie crust into a 9-inch pie dish.
- In a large bowl, gently mix the sliced peaches with sugar, flour (or cornstarch), cinnamon, nutmeg, and lemon juice until the peaches are well coated.
Assembly and Baking
- Pour the peach mixture into the pie crust and dot the top with small pieces of butter.
- Carefully place the second pie crust over the filling, crimp the edges to seal, and cut a few slits in the top for steam to escape.
- Bake for 15 minutes at 400°F (200°C), then reduce the oven temperature to 375°F (190°C) and continue baking for another 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
Cooling and Serving
- Allow the pie to cool completely on a wire rack before serving to allow the filling to set properly.
Notes
For an extra touch, serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. If using frozen peaches, thaw them and drain any excess liquid before mixing with the other ingredients to prevent a watery pie.
