Ingredients

Pie Crust
  • 2 sheets store-bought pie crusts
Filling
  • 6 medium peaches, peeled, pitted, and sliced
  • 0.75 cup granulated sugar
  • 2 tablespoons all-purpose flour or cornstarch
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, cut into small pieces

Equipment

  • 9-inch pie dish
  • large bowl
  • wire rack

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and place one pie crust into a 9-inch pie dish.
  2. In a large bowl, gently mix the sliced peaches with sugar, flour (or cornstarch), cinnamon, nutmeg, and lemon juice until the peaches are well coated.
Assembly and Baking
  1. Pour the peach mixture into the pie crust and dot the top with small pieces of butter.
  2. Carefully place the second pie crust over the filling, crimp the edges to seal, and cut a few slits in the top for steam to escape.
  3. Bake for 15 minutes at 400°F (200°C), then reduce the oven temperature to 375°F (190°C) and continue baking for another 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
Cooling and Serving
  1. Allow the pie to cool completely on a wire rack before serving to allow the filling to set properly.

Notes

For an extra touch, serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. If using frozen peaches, thaw them and drain any excess liquid before mixing with the other ingredients to prevent a watery pie.
