Preparation
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
Mixing
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the old-fashioned rolled oats and raisins until evenly distributed.
Baking
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between cookies.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, underbake the cookies slightly. You can substitute dried cranberries or chocolate chips for raisins if desired.
