Wet Ingredients
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or grease it well.
Mixing
  1. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, pumpkin pie spice, and salt.
  2. In a separate medium bowl, combine the pumpkin puree, egg, milk, vegetable oil, and vanilla extract; mix until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined; be careful not to overmix, as a few lumps are fine.
Baking
  1. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  2. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  3. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes
