Preparation
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Mixing
- In a large bowl, cream together the softened butter and eggs until light and fluffy.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
- Stir in the vanilla extract until just combined, being careful not to overmix the batter.
Baking
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, make sure your butter and eggs are at room temperature before you start mixing. This helps create a smooth, emulsified batter and a tender crumb. Feel free to top these cupcakes with your favorite frosting once they're completely cooled, such as a classic vanilla buttercream or a tangy cream cheese frosting.
