  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Mixing
  1. In a large bowl, cream together the softened butter and eggs until light and fluffy.
  2. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  3. Stir in the vanilla extract until just combined, being careful not to overmix the batter.
Baking
  1. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  2. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  3. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, make sure your butter and eggs are at room temperature before you start mixing. This helps create a smooth, emulsified batter and a tender crumb.
