Preparation
- Wash and peel the potatoes, then cut them into 1-inch cubes.
- Place the cubed potatoes in a large pot and cover with cold, salted water.
- Bring to a boil and cook until fork-tender, about 15-20 minutes.
Assembly
- Drain the potatoes and let them cool slightly.
- In a large bowl, combine the cooled potatoes, chopped celery, red onion, and hard-boiled eggs.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, fresh dill, salt, and pepper.
- Pour the dressing over the potato mixture and gently fold until all ingredients are evenly coated.
Chilling
- Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld and the salad to chill thoroughly.
- Serve cold and enjoy!
Notes
For extra flavor, you can add a pinch of smoked paprika or a dash of hot sauce to the dressing. This potato salad can be made a day in advance and stored in the refrigerator.
