Preparation
- Wash and peel the potatoes, then cut them into 1-inch cubes.
- Place the cubed potatoes in a large pot and cover with cold water.
- Add a generous pinch of salt to the water and bring to a boil.
Cooking
- Cook the potatoes for 15-20 minutes, or until fork-tender.
- Drain the cooked potatoes thoroughly and let them cool for a few minutes.
Assembly
- In a large mixing bowl, combine the mayonnaise, chopped celery, chopped red onion, Dijon mustard, apple cider vinegar, salt, and black pepper.
- Add the slightly cooled potatoes to the dressing mixture and gently fold until all potatoes are evenly coated.
- Taste and adjust seasonings as needed, then cover and refrigerate for at least 30 minutes before serving.
Garnish
- Garnish with fresh chopped parsley if desired.
Notes
For best results, prepare the potato salad a few hours in advance to allow the flavors to meld. You can also add hard-boiled eggs or pickles for extra flavor and texture.
