Method
 

Preparation
  1. Wash and peel the potatoes, then cut them into 1-inch cubes.
  2. Place the cubed potatoes in a large pot and cover with cold water.
  3. Add a generous pinch of salt to the water and bring to a boil.
Cooking
  1. Cook the potatoes for 15-20 minutes, or until fork-tender.
  2. Drain the cooked potatoes thoroughly and let them cool for a few minutes.
Assembly
  1. In a large mixing bowl, combine the mayonnaise, chopped celery, chopped red onion, Dijon mustard, apple cider vinegar, salt, and black pepper.
  2. Add the slightly cooled potatoes to the dressing mixture and gently fold until all potatoes are evenly coated.
  3. Taste and adjust seasonings as needed, then cover and refrigerate for at least 30 minutes before serving.

Notes
