Preparation
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Pound chicken breasts to an even thickness (about ½ inch) between two pieces of plastic wrap.
- Prepare three shallow dishes: one with flour, salt, and pepper; one with beaten eggs; and one with breadcrumbs and grated Parmesan.
- Dredge each chicken breast in flour, then egg, then the breadcrumb mixture, ensuring thorough coating.
Cooking
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear chicken for 2-3 minutes per side until golden brown, then transfer to the preheated baking dish.
- Spoon marinara sauce over each chicken breast, then top with mozzarella and a sprinkle of Parmesan.
- Bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Serving
- Garnish with fresh basil and serve immediately with your preferred side dish, such as pasta or a salad.
Notes
For extra flavor, add a pinch of garlic powder and dried oregano to the breadcrumb mixture. Serve with a side of spaghetti or a fresh green salad for a complete meal.
