Preparation
- Pat the chicken breasts dry and season with salt and pepper, then dredge them in flour, shaking off any excess.
Cooking
- Heat butter and olive oil in a large skillet over medium-high heat. Add the chicken and cook for 2-3 minutes per side, or until golden brown and cooked through.
- Remove chicken from the skillet and set aside. In the same skillet, add lemon juice, chicken broth, and capers, scraping up any browned bits.
- Bring the sauce to a simmer and cook for 1-2 minutes, until slightly thickened. Return the chicken to the skillet, spooning the sauce over it.
Finishing
- Garnish with fresh parsley and serve immediately.
Notes
For an extra burst of flavor, add a splash of white wine to the sauce with the lemon juice and chicken broth. Serve with pasta, rice, or a side of steamed vegetables.
