  • 4 chicken breasts boneless, skinless
  • 1/2 cup flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup lemon juice
  • 1/2 cup chicken broth
  • 2 tbsp capers
  • 2 tbsp fresh parsley chopped
  • salt to taste
  • black pepper to taste

Method
 

Preparation
  1. Pat the chicken breasts dry and season with salt and pepper, then dredge them in flour, shaking off any excess.
Cooking
  1. Heat butter and olive oil in a large skillet over medium-high heat. Add the chicken and cook for 2-3 minutes per side, or until golden brown and cooked through.
  2. Remove chicken from the skillet and set aside. In the same skillet, add lemon juice, chicken broth, and capers, scraping up any browned bits.
  3. Bring the sauce to a simmer and cook for 1-2 minutes, until slightly thickened. Return the chicken to the skillet, spooning the sauce over it.
Finishing
  1. Garnish with fresh parsley and serve immediately.

Notes

For an extra burst of flavor, add a splash of white wine to the sauce with the lemon juice and chicken broth. Serve with pasta, rice, or a side of steamed vegetables.
