  • 1 (10-12 lb) whole turkey
  • 0.5 cup butter, softened
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 cloves garlic, minced
  • 1 tbsp salt
  • 0.5 tsp black pepper
For the Gravy (Optional)
  • 2 cups turkey drippings
  • 2 cups chicken broth
  • 0.25 cup all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and remove the giblets and neck from the turkey.
  2. In a small bowl, combine the softened butter, rosemary, thyme, minced garlic, salt, and pepper to create a herb butter.
  3. Gently separate the skin from the turkey breast and spread half of the herb butter evenly under the skin, then rub the remaining butter over the outside of the turkey.
Roasting
  1. Place the turkey on a roasting rack in a large roasting pan and add 1 cup of water to the bottom of the pan.
  2. Roast for 2.5 to 3 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C), basting every 45 minutes with pan juices.
  3. If the skin starts to brown too quickly, loosely tent the turkey with aluminum foil.
Resting and Serving
  1. Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving to allow the juices to redistribute.
  2. Carve the turkey and serve warm, optionally with gravy made from the pan drippings.

Notes

For extra flavor, you can stuff the turkey cavity with aromatics like onion halves, lemon wedges, and extra herbs. Adjust roasting time based on your turkey's weight; a general rule is 15-20 minutes per pound for an unstuffed turkey.
