  • 2 Eggs beaten
  • 1 cup Frozen mixed vegetables
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated
  • 2 Green onions sliced, for garnish
Optional Add-ins
  • 1/2 cup Cooked chicken or shrimp
  • to taste Sriracha for heat

Cooking Steps
  1. Heat a large pan or wok over medium-high heat, then add a drizzle of oil.
  2. Add the minced garlic and grated ginger to the pan, cooking for about 30 seconds until fragrant.
  3. Stir in the frozen mixed vegetables and cook for 3-5 minutes, allowing them to soften slightly.
  4. Push the vegetables to one side of the pan, pour in the beaten eggs, and scramble them until cooked through.
  5. Add the riced cauliflower to the pan, along with soy sauce and sesame oil; stir-fry for 5-7 minutes, incorporating all ingredients, until the cauliflower is tender-crisp and heated through. Garnish with sliced green onions and serve hot.

Notes

For best results, avoid overcrowding the pan; cook the cauliflower in batches if necessary. Adjust soy sauce and sesame oil to your taste, and feel free to add your favorite protein like chicken or shrimp for a heartier meal.
