Cake
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, combine the buttermilk, vegetable oil, eggs, red food coloring, vinegar, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
Cream Cheese Frosting
- In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, mixing until fully incorporated and smooth.
- Stir in the vanilla extract until combined.
Assembly
- Once the cakes are completely cool, spread a layer of cream cheese frosting over the top of one cake layer.
- Place the second cake layer on top and cover the entire cake with the remaining frosting.
Notes
For an extra vibrant red color, you can use gel food coloring. Make sure all your cold ingredients like buttermilk, cream cheese, and butter are at room temperature for a smoother batter and frosting. This cake is best stored in the refrigerator due to the cream cheese frosting, but bring it to room temperature before serving for the best flavor and texture.
