Chicken Preparation
- Season chicken breasts with Southwest seasoning. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until cooked through.
- Remove chicken from skillet and let it rest for a few minutes. Once slightly cooled, shred or dice the chicken into bite-sized pieces.
Salad Assembly
- In a large bowl, combine chopped romaine lettuce, black beans, corn, cherry tomatoes, diced red onion, and diced avocado.
- Add the shredded or diced chicken to the bowl with the vegetables.
Dressing Preparation and Serving
- In a small bowl, whisk together lime juice, olive oil, honey, cumin, chili powder, salt, and black pepper for the dressing.
- Pour the dressing over the salad and toss gently to combine all ingredients. Serve immediately and enjoy your delicious Southwest Chicken Salad.
Notes
For an extra kick, add a pinch of cayenne pepper to the dressing. You can also add tortilla strips or crushed tortilla chips for a crunchy topping.
