  • 2 large chicken breasts
  • 1 tbsp Southwest seasoning
  • 1 tbsp olive oil
  • 6 cups romaine lettuce chopped
  • 1 can black beans rinsed and drained
  • 1 cup corn fresh or frozen and thawed
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion diced
  • 1 avocado diced
Dressing
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp honey
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

Chicken Preparation
  1. Season chicken breasts with Southwest seasoning. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until cooked through.
  2. Remove chicken from skillet and let it rest for a few minutes. Once slightly cooled, shred or dice the chicken into bite-sized pieces.
Salad Assembly
  1. In a large bowl, combine chopped romaine lettuce, black beans, corn, cherry tomatoes, diced red onion, and diced avocado.
  2. Add the shredded or diced chicken to the bowl with the vegetables.
Dressing Preparation and Serving
  1. In a small bowl, whisk together lime juice, olive oil, honey, cumin, chili powder, salt, and black pepper for the dressing.
