  • 1 onion chopped
  • 1 ounce taco seasoning mix or 3 tbsp
  • 1 ounce ranch seasoning mix
  • 1 can diced tomatoes with green chilies undrained, 10 ounces
  • 1 can corn drained, 15 ounces
  • 1 can black beans rinsed and drained, 15 ounces
  • 2 cups beef broth
  • 1 cup water

  • sour cream
  • tortilla chips crushed

Cooking Steps
  1. Brown the ground beef and chopped onion in a large pot over medium heat, then drain any excess fat.
  2. Stir in the taco seasoning and ranch seasoning mixes, cook for 1 minute.
  3. Add the undrained diced tomatoes with green chilies, drained corn, rinsed black beans, beef broth, and water to the pot and bring to a simmer.
  4. Reduce heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld.
  5. Ladle into bowls and serve with optional toppings like shredded cheddar cheese, a dollop of sour cream, and crushed tortilla chips.

Notes

For a spicier kick, add a pinch of cayenne pepper with the seasonings. This soup also freezes well for future meals.
