Ingredients
  

Tart Base
  • 1 Puff Pastry (sheet)
  • 2 tbsp Dijon Mustard
Filling
  • 3 medium Heirloom Tomatoes sliced
  • 4 oz Goat Cheese
  • 1 tbsp Fresh Thyme
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheet on the prepared baking sheet and spread Dijon mustard evenly over it, leaving a small border.
  3. Arrange the sliced heirloom tomatoes over the mustard, then crumble goat cheese on top of the tomatoes.
Baking
  1. Drizzle olive oil over the tart and sprinkle with fresh thyme, salt, and black pepper.
  2. Bake for 25-30 minutes, or until the pastry is golden brown and puffed.
Serving
  1. Let the tart cool for a few minutes before slicing and serving warm.

Notes

For extra flavor, you can caramelize some onions and add them under the tomatoes. Try a mix of different colored heirloom tomatoes for a visually appealing tart.
