Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on the prepared baking sheet and spread Dijon mustard evenly over it, leaving a small border.
- Arrange the sliced heirloom tomatoes over the mustard, then crumble goat cheese on top of the tomatoes.
Baking
- Drizzle olive oil over the tart and sprinkle with fresh thyme, salt, and black pepper.
- Bake for 25-30 minutes, or until the pastry is golden brown and puffed.
Serving
- Let the tart cool for a few minutes before slicing and serving warm.
Notes
For extra flavor, you can caramelize some onions and add them under the tomatoes. Try a mix of different colored heirloom tomatoes for a visually appealing tart.
